Our local grocery store, Town and Country, has what I like to refer to as the “Rot Rack”. It’s a rack in the back of the store where they discount produce that is going bad or about to.
Savvy shoppers can get a real deal by grabbing the fruits or vegetables that are about to start decomposing. Get them home quickly and they are perfect for cooking, freezing or canning.
Last week (yes, this post is out of order, this all went down before the BIP and Mogie’s birthday) I found a crate of grape tomatoes for $2.39. That’s 12 pints. Those things go for $2 or so a pint. Of course I bought the crate.
Then I had to figure out what to do with all those tomatoes. And quick-like.
I mixed 12 cups of tomatoes with some olive oil, salt and pepper, and roasted them in the oven. Then, I made a double batch of roasted tomato soup.

There were still a lot of toms left over, so I filled all 4 racks of the dehydrator. Now we have enough sun-dried tomatoes to get us through the winter. Because you just can’t survive winter without sun-dried tomatoes.
