One of my resolutions this year is to further reduce our use of plastic. I’ve continued making our bread, yogurt, and almost everything else we eat. At times it is a total pain in the ass, but in the end it is worth it.

On of the easiest things to make (and eliminate unnecessary packaging) is almond milk. Like so many things it comes in un-recyclable Tetra Brik Aseptic. Tetra Paks combine paper and plastic – and some even contain hidden metal. No bueno.

We use almond milk in our smoothies, and any other recipe that calls for milk. Unfortunately, almond milk doesn’t work to make yogurt, and no one really wants to drink it straight. Then again, no one here really drinks cow milk straight either.

Soak almonds overnight

Almond Milk Recipe

1. Soak 1 cup of almonds overnight (or for several hours)
2. Drain almonds
3. Whir almonds and 4 cups of water in a blender
4. Pour almond mix through a sieve to strain out mush.

Stick it in the fridge, stick it in the fridge, stick it in the fridge. I like cold beverages.

And there you have it, your very own almond milk. I put the leftover mush in bread, smoothies, or anywhere else I want to add a little protein.
